Massini, A Typical Uruguayan Sweet

The massini is a simple, but delicious dessert that, as you can guess from its name, has its origin in Italy. However, in Uruguay it is considered one of the typical desserts.

It is a pionono (a sheet of sponge cake) filled at the bottom with whipped cream and wrapped with another pionono and yolk mola. A real delicacy for lovers of sweet and fluffy.

Next we will show you how to prepare this delicious Uruguayan dessert so particular. That way you won’t have to sigh about not being able to go to the Carrera confectionery itself, which does them so well.

Ingredients

For the pionono

  • 1/2 cup of flour (50 g).
  • 7 tablespoons of sugar (70 g).
  • 3 medium eggs (180 g).
  • 1 tablespoon of cornstarch (10 g).
  • Optional: 1 teaspoon of honey (5 g).
  • 1 teaspoon of vanilla flavoring (5 ml).

For the filling

  • Ice.
  • 1/2 liter of liquid cream (500 ml).
  • 8 tablespoons of sugar (80 g).
  • 1 teaspoon of vanilla flavoring (5 ml).

For the Italian meringue

  • 4 clear.
  • 2 cups of sugar (200 g).

For the yolk it’s cool

  • 6 yolks.
  • Powdered sugar.
  • 1 teaspoon of cornstarch (5 g).
  • 1 and a half cups of sugar (150 g).
  • 1/4 cup of water (25 ml).
  • 1 splash of cognac. 

Preparation of the pionono

  • Preheat the oven to 200ÂșC.
  • Beat all the ingredients, except the flour and cornstarch, for about 10 minutes.
  • Sift the flour and cornstarch and add them to the previous mixture, little by little.
  • Put it in a round mold.
  • Bake your cake for about 30 minutes.

Note:  you can make your cocoa pionono by adding a tablespoon.

Preparation of the filling

  • Beat the cream with the sugar in a bowl with enough ice on the base so that it stays cold and is easier to make. It has to be chantilly type  . Put it in the fridge.

Preparation of Italian meringue

  • Put the sugar and water in a saucepan over high heat.
  • The whites are beaten to the point of snow.
  • When the syrup is done, add it in the form of a fine thread and continue beating.

    Note:  if you want you can make a traditional meringue.

    Preparation of the yolk mola

    • Beat the yolks.
    • Add the cornstarch and mix well.
    • Make a syrup in a saucepan with the water and sugar.
    • Pour the syrup over the yolk mixture.
    • Put it on a low heat and do not stop stirring until it thickens.

    Preparation of the massini

    • Mix the meringue with the whipped cream .
    • Cut the cake into 3 parts in a circular shape.
    • Brush the cake in syrup.
    • Put the meringue and whipped cream mixture on the base .
    • Place another brushstroke base in cognac and on it the yolk is cool.
    • Sprinkle with sugar and burn with a blowtorch.

    Ingredients

    • 4 clear.
    • 4 custards.
    • 1 cake.
    • 2 cups of sugar (200 g).
    • Sugar for dusting.
    • 1/2 liter of whipped cream.

    Preparation

    • Make a very simple meringue by beating the whites with the sugar. When it is done, put it in a water bath for a few minutes so that it is raw.
    • Cut your cake into squares and soak them in the milk with the help of a silicone brush.
    • Add the custard.
    • Then put the meringue.
    • Put another piece of cake cut and soaked in milk again.
    • Sprinkle with icing sugar and blow it to burn the sugar.

    On the other hand, if you want to have a low-calorie massini, prepare the cake without refined sugar, but with substitutes. We recommend stevia or honey and, for the rest of the assembly, low-fat cream.
