Ingredients

  • 3 medium potatoes
  • 1 celery
  • ½ cup onion in small cubes
  • 1 clove of garlic, crushed
  • ½ cup chives, chopped into small cubes
  • 5 slices of Serrano ham
  • 3 tablespoons of butter
  • 4 tablespoons of wheat flour
  • 4 tablespoons of white wine
  • Olive oil
  • 1 cup of milk
  • Bouquet garni (bunch of bay leaf, parsley, thyme and coriander tied with a leek leaf)
  • Salt
  • Pepper

For the white background or chicken broth:

  • 5 cups of water
  • ¼ kilo of white bones
  • ½ onion
  • ½  carrot
  • 1 piece of leek

 Preparation

  1. The first thing we must do to prepare this ham and potato cream delight is to wash, peel and cut our potatoes into medium cubes and then bring them to high heat, along with the celery cubes, for the time necessary until the vegetables soften. .
  2. In parallel, make a white background or chicken broth, bringing the five cups of water, a piece of leek, half an onion and half a carrot to a simmer along with ¼ kilo of white bones. Cook for a period of 30 minutes, until the water is impregnated with the aromas and flavors of the bones and vegetables.
  3. At this point, add the bouquet garni and boil for five more minutes.
  4. Now, filter the white background and reserve.
  5. In another pot, pour the olive oil and sauté the onion, garlic and chives until they crystallize. Add the tablespoons of white wine.
  6. Add the potatoes, celery and the white background.
  7. In a saucepan, mix the 3 tablespoons of butter with the tablespoons of wheat flour until the result is a mixture of sandy consistency.
  8. Add the milk and stir these ingredients until they have no lumps of flour.
  9. Mix the flour and milk mixture with the potato broth, stir and cook for three minutes.
  10. Season to taste.
  11. Now, we let our soup rest and then blend and serve with slices of Serrano ham.

Ingredients

  • 3 potatoes cut into medium cubes
  • ½ cup celery in medium cubes
  • 1 garlic mashed
  • ½ cup onion, diced into small cubes
  • ½ cup chives, chopped into small cubes
  • 1 cup of York type ham in medium cubes
  • 4 cups of chicken broth or white background
  • 1 boiled egg
  • Fried bread croutons
  • Saffron, bay leaf or thyme.
  • Olive oil
  • Parsley and coriander
  • Salt and pepper

 Preparation

  1. Pour the chicken broth or the white background flavored with bouquet garni or fresh herbs into a casserole, add the three potatoes and the celery.
  2. In a frying pan, fry the small cubes of onion, chives and garlic with olive oil. Reservation.
  3. When the potatoes are soft, add the onion and chives sauce.
  4. Add the York ham and saffron.
  5. In a deep plate, serve the croutons and a finely chopped boiled egg.
  6. Add the York ham and potato broth.
  7. Garnish with a drizzle of parsley and finely chopped cilantro.
